    1 beaten egg yolk (for glazing)

    Preparation:

    Preheat the oven to 200°C (400°F). In a bowl, combine the blueberries, sugar, cornstarch, lemon juice, and lemon zest. Place one sheet of pastry in a pie dish and fill with the blueberry mixture. Cover with the second sheet of pastry, seal the edges, and make a few slits on top. Brush with egg yolk and bake for 40 to 45 minutes, until the crust is golden brown.
